Sweet Potato NachosThis recipe makes 6 servingsIngredients:Sweet potato chips:2 sweet potatoes1 medium onion1 cup tomatoes3 garlic cloves – minced1 tbsp. tomato paste1 tsp. paprika½ tsp cumin – ground4 oz. water (optional)1 tbsp. olive oilMeat Topping:16 oz. ground beef Ground beef topping1.5 avocado – sliced1 cup tomatoes – chopped½ cup green onion – chopped6 oz. shredded cheddar cheeseNachos:Sweet potatoes chipsMethod of Preparation:1. preheat the oven to 375 degrees F. Peel the sweet potatoes and slice thinly, using either a mandolin or sharp knife. Place the chips in a single layer on a baking sheet lined with parchment paper.2. Bake in the oven for 10 minutes, then flip the chips over and bake for another 10 minutes. watch the chips closely and pull off any chips that start to brown, until all of the chips are cooked.3. While the potato chips are baking, Add the oil and onion to a medium pan and sauté for 3-4 minutes until softened. Add the garlic, ground beef and tomato paste and cook for 4-5 minutes, stirring regularly.4. Add the diced tomatoes and remaining spices and stir well to combine. Bring the mixture to a simmer and then turn the heat down to medium-low. Cook, covered, for 20-25 minutes, stirring regularly. Add water if needed.5. To assemble the nachos, form a large circle with the sweet potato chips on a platter.
